Comfort Food Recipe – Roast Chicken with Potatoes

Hello People, hope you guys are keeping well. I dragged myself out of bed this morning, still got the sore throat and feeling tired…fortunately, I finished work early today – last night was a killer didn’t get home till 8pm!! Well, the upside is Pandabear has been taking me out for dinner to grab some take away. I’m like yay! Don’t have to cook…ended up trying the Krushers drink at KFC, not too bad I got the mango yoghurt flavoured drink but I don’t think I would pay $4 for it though. This particular recipe is very simple and great for feeding people in the party minimal preparation and all you need to do is chuck the chicken into the oven and then it’s ready for eating 🙂 There’s a few variation of making Roast chicken, I have adopted Jamie Oliver’s way of flavouring 🙂

Here it is…

Roast Chicken with Potatoes

Ingredients

1 whole chicken
2-3 large clove of garlic
1 lemon
1 sprig of rosemary
50g of butter
5-6 potatoes

Instructions

1. To prepare the chicken, soften the butter and add in some chopped rosemary, salt and pepper to season and mix it until it comes to a soft consistency. Now here’s the tricky part at the bottom of the chicken, insert your fingers into the chicken skin and it will create a hole and with your butter mixture push this so that it covers the surface area of the chicken.

2. Slice the lemon, skin off some cloves of garlic, and insert the lemon and some chopped rosemary into the chicken cavity – I don’t like chicken fillings cos I find they have a strong herb taste. So the Lemon will substitute as a nice filling or flavour the chicken very well. Rosemary and lemon are best mates, they go really well with each other.

3. Now, prepare for the potatoes, in a large pot boil the potatoes – chop this in quarters parboil this until it’s semi cooked and chuck them into a baking dish along with the chicken and chuck the remainder garlic cloves – skin on is ok. Drizzle it with some olive oil, pop them into the oven for about 180 degrees up to 45-50 minutes until the chicken is cooked. How to tell the chicken is cooked poke your knife into the drumstick – as it takes a long time for the drumstick to cook, if there’s no blood it’s cooked and the garlic would taste fantastic once it’s roasted 🙂

Comfort Food Recipe – Chicken Rice

Hello People, hope you guys are doing well – who ever is reading my blog 🙂 I have come to a realisation some days you just don’t feel like cooking, tonight is one of those nights I have no energy for cooking. This week has been a tiring week, being emotionally upset with someone and work is busy… sometimes when I feel upset my food turns out to be miserable too, bland and tasteless – might as well call it a blob. So it just goes to show that when you cook you need to add a special ingredient into it and it’s ‘LOVE’ So tonight I will still cook my dinner and let you guys know how it turns out 🙂

Anyways, this particular recipe is very simple – there’s quite a few variation to the chicken rice recipe. I’ve recently found this packet of Hainanese Chicken rice pre-mix sauce that makes awesome chicken rice – it’s for a night when I feel lazy. Anyways, my recipe is still quite simple – I still go with my own motto ‘anyone can cook if you put your heart to it’

Here it is…

Maryann’s Chicken Rice

Ingredients

3-4 pieces of chicken thighs
1 small ginger
4 sprigs of spring onions
2-3 cloves of garlic
3 tablespoon of soya sauce
1 teaspoon of sesame oil
1 cup of rice

Instructions

1. To prepare for the rice part – you must heat up the pan with some oil and add in minced garlic, chopped spring onion, large pieces of ginger and stir fry it until you can smell the aroma and add in the rice and stir fry it for a few more minutes. Chuck the rice into the rice cooker and if you like it’s optional You can tie up some spring onions into knots and chuck them in 🙂

2. Now the chicken part – heat up the pan with some oil and add in exactly the same ingredients for preparing the rice part except this time you add in some sesame oil and soya sauce for extra fragrance. Take out the sauce put it aside and start browning the chicken thighs. Now traditionally chicken rice are made out from whole chicken, but if you’re lazy like me just use thighs they taste just as good and quicker to cook.

3. When the chicken thighs are golden brown, pop in the sauce and let it simmer for a few minutes until the thigh soaks up the goodness of the sauce. Make sure you keep some table spoon worth of sauce for plating.

4. Now it’s plating time, usually I would serve my chicken rice with some Chinese vegies – Gai Lan is my favourite with chicken rice. And ofcourse pour the remainder sauce over the chicken to keep it saucy and garnish with red hot chillies or coriander and you’re laughing!!

Comfort Food Recipe – Parmesan Chicken Breast with Prosciutto

Hello again, another recipe from Jamie’s ministry of food, this dish is great as it looks fantastic when you are serving it at a party.

Here it is…

Parmesan Chicken Breast with Prosciutto

Ingredients

Small bunch of thyme
8-9 slices of prosciutto
some Parmesan cheese
2 chicken breast

Instructions
1. Glad wrap the chicken breast in between 2 layers of glad wrap and hit it with a rolling pin to make it into same thickness so it cooks evenly. From thick end to thin end. With medium. Ad a sprig of thyme around the chicken and add in grated parmesan cheese, pinch of pepper, grate lemon zest and wrap the prosciutto over the chicken breast so that it covers up the cheese.

2. Heat the pan with some oil and flip the chicken breast over to the pan cook the chicken breast until the chicken is 1/3 cooked. Flip over and the prosciutto should be crispy. Approx 2.5 minutes on each side for cooking.

3. Drizzle over the chicken breast with some balsamic vinegar and olive oil and slice them up and serve with mix green salad 🙂

4. To make it more fancy you can pan fried some scallops and put them on top and it looks fantastic!

Comfort Food Recipe – Malaysian Curry Chicken

Okies, we’ve come to the curry dish 🙂 yay I love my curries, even though Taiwanese cuisines does not specialise in curries I have since learnt a few curry dishes from some aunties and they are great. I could just gobble it down with steamed rice. Anyways, all curries are really easy to make – provided you don’t have to make the paste from scratch. Even if you have to as long as you have all the ingredients and you have a blender it’s really simple. However, I prefer to use curry powders as I find by stir frying curry powders with the meat it give that extra aroma that’s fantastic. So yeah…

Here it is…

Malaysian Curry Chicken

Ingredients

5 chicken thighs
2 tablespoon of Malaysian curry powders
5 potatoes
1 can of coconut cream

Instructions

1. Chop up the chicken thighs into pieces, heat up pan and add in chicken pieces and stir fry until golden brown add in the curry powders. You can buy any curry powders from supermarkets – Indian, malaysian, mild curry powder etc. Once you start to smell the aroma add in the coconut cream.

2. Peel potatoes and boil them until they are nearly cooked, and cut them in 1/2 and pop them into the curry mixture

3. Simmer on low heat for about 40 minutes or until the potatoes are cooked

There you have it a simple and delicious curry dish 🙂

Comfort Food Recipe – Sweet and Sour Chicken

Hello people, it’s back to a chicken dish again – I love chicken…this dish is pretty common and you can order it everywhere in any Chinese restaurant. I’ve come to a realisation that sometimes it’s just as easy to buy packets of pre-mix sauces than making your own. As when you get home from work all you want is to whip up a fast dish and sit by the couch with the TV on and eat your food..so these days, when I feel kinda lazy to make sauces from scratch I would resolve to my packet of pre-mix sauces that would taste pretty good. However, not all pre-mix packet of sauces are tasty – it’s a matter of trial and error until you get accustom to the particular brand. 🙂

Here it is…

Sweet and Sour Chicken

Ingredients

5 chicken thigh pieces
1/2 a zucchini
1 – 2 cloves of garlic
1 table spoon of tomato sauce
1 teaspoon of vinegar
1 teaspoon of soya sauce
1 teaspoon of sugar
1 cup of pineapple pieces

Instructions

1. Chop up the chicken thighs into bite size pieces, heat up pan with some oil and add in minced garlic and stir fry with chicken pieces until golden brown, add in chopped up zucchini – if you don’t like zucchini you can put in red capsicum instead.

2. Mix up the sweet and sour sauce – you can buy any pre-mix packet sauce or alternatively you can mix your own sauce – mix together – Tomato sauce, vinegar, soya sauce and sugar. Pour this sauce into the pan.

3. Stir fry around until the sauce coats the chicken and then chuck in pineapple pieces. Now if you don’t like pineapple like me – you can miss this 🙂 Plate up and serve with steamed rice..

Comfort Food Recipe – Sesame Oil Chicken Soup

Morning People, it was hard getting up to get to work this morning…but yeah they really should have the public holiday on a Monday instead of a Tuesday. Anyways, this particular dish is very healthy and yummy – great for winter time but not too bad for summer time to bring down some heat. I was told that sesame oil are really good for your hair. Especially the dark sesame oil ones. Anyways, it’s great for when you’re sick as well. 🙂

Here it is…

Sesame Oil Chicken Soup

Ingredients

1 whole chicken
3 table spoon of sesame oil
1/2 cabbage
1 small piece of ginger

Instructions

1. Cut up the whole chicken into large pieces, and heat up pan with some oil – chuck in ginger and chicken pieces stir fry until golden brown. Add in some sesame oil – you can grab a bottle from Any of the Asian Grocery store.

2. Add in chopped cabbages, add water in to cover the chicken pieces add salt for seasoning – you cook the chicken faster by cooking it in a slow cooker – if you don’t have one that’s not a problem, just cook it under simmer heat for around 40 minutes until the meat is tender.

Comfort Food Recipe – Five Spiced Chicken with Potato Salad

Okies, I’m getting hungry writing up these recipes – so this will be my last post for the day. 🙂 I love Chinese Five spice – it makes a really nice aroma when you marinate with chicken or beef. This time I’m going to do another chicken dish along with a yummy potato salad. 🙂

Here it is…

Five Spiced Chicken with Potato Salad

Ingredients

1 -2 chicken thighs
1 table spoon of Chinese five spice
1 teaspoon of soya sauce
2 -3 potatoes
1 cucumber
2 tablespoon of mayo
1 egg
some broccoli
2 -3 cloves of garlic

Instructions

1. Marinate the chicken thighs with soya sauce and five spice – you can buy and chinese five spice from any of the Asian grocery store they come in packets. If you can marinate for 30 minutes it would be ideal otherwise overnight is ok too.

2. Heat oil in pan, and pop the marinated chicken thighs into the pan and heat up until it’s golden brown.

3. For potato salad, boil the potatoes and egg and drain and mix them together, chop up cucumbers and mix it with mayo, season with salt & pepper – if you have Japanese mayo or whole egg mayo they work best 🙂

4. Mince garlic add in oil and heat up in the pan and stir fry the chopped broccoli

5. Plate up everything and you can serve it with Bryani rice – you can buy pre-mix bryani from Asian Grocery store and just cook it with steam rice.

There you have it awesome delicious five spiced chicken with potato salad.
