Hazelnut Torte

Hi Guys,

As I’ve mentioned earlier that over the weekends I have baked two desserts – one is the hazelnut torte and the other one is apple pie. So the hazelnut torte is made from thermomix recipe so it’s time to use my thermie. The recipe seemed simple enough consists of packet of hazelnuts, corn flour, plain flour, sugar, baking powder and eggs. There’s no butter! So it’s got to be relatively healthy (you would hope so). The recipe also mentioned once you’ve made the torte you can make the coppadel nonno (coffee or vanilla cream) sounds nice. So I chuck everything into thermie and insert the butterfly into thermie to whip up the egg whites. I’ve had instances where the egg whites didn’t work out when I was using thermie but I forgot to insert the butterfly. Here it is..

The beaten egg white turned out really well..then it’s a matter of mixing the hazel nut mixture with the egg whites with folding action.

Then it’s time to bake the torte…

Surprisingly the cake turned out really well very moist and tall – good enough for me to layer it in 3 layers. At least when I took the skewers to poke it to make sure it’s cooked, it wasn’t completely cooked I had it in the oven for 45 minutes and then left it in for a further 5 minutes.. and it was perfect!

Then it was time to make the coppadel nonno coffee cream – I’m not really a coffee person but I suppose coffee goes well with hazelnut. So yeah I thought I’ll try it anyways..

Even though there wasn’t any butter in the cake but there was lots of fresh cream in the coppadel nnonno coffee cream. It was time to slice the cake in layers and fill them with the coffee cream goodness.

after layering all the coffee cream it was time to cover the whole cake with coffee cream – I still had so much coffee cream left….so I kept a small container worth of it for waffles..

The coffee cream makes the cake look really shiny and the recipe ask to put desiccated coconuts around the whole cake. I thought to myself why coconut? Oh well…

moment of truth to slice it in half and see whether there are layers or not…

I didn’t go super crazy with layering the cream in the centre just enough so it doesn’t explode. Anyways…gave half of the cake to mum and some to dad and others…

overall, the cake was nice and moist full of hazelnut taste and the taste of dessicated coconut goes really well with the cake. But yeah, when Pandabear had it he said it would have been 10/10 except for the dessicated coconut which sort of ruin the taste – or overpowering…anyways, he decorated the cake with some peanut chocolate m&ms..

The cake was a success..I’ll probably bake it again some other time…


Lite and easy dinners

Hi guys, I thought I’ll quickly do up a post on the lite and easy dinners. Well, both Pandabear and I are finding that we are still hungry still after eating our dinners. I must admit the dinners are very yummy and it looks relatively big size compared to Jenny Craig but for some strange reason, we get hungry around 9.30pm. So I have been snacking still 😦 I have this breville eggo machine that does perfectly cooked soft or hard boiled eggs. It goes so well with soya sauce!! And if I’m still hungry after having an egg I will either toast a slice of bread or have it with some baked beans. I weighed myself last night haven’t lost anything…anyways, here are the two dinners I’ve had..

The meals were really nice, there was loads of gravy (I love gravy and sauces) and you can see the piece of pumpkin and lot’s of peas. I find most of Lite and easy’s frozen dinners usually comes with frozen carrots, green beans, corn or peas. Which in a way is good it ensure you have lots of vegies but it means the size of the meat is tiny 😦 There were only a few pieces of turkey breast and cos it’s cranberry sauce it was way too sweet for my liking…but I managed to eat it all anyways…it really didn’t fill me up and I was still hungry…

Then the other night I had the crumbed fish – I loved crumbed items – usually they are really good – even though it might be a little soggy but they still taste pretty good..and it usually gets served with carrots & peas and corns…

Overall, the meals are pretty tasty but they are not filling me up 😦


Home made apple pie

Hi Guys, okies as I’ve mentioned earlier I baked two desserts over the weekend. Hazelnut torte and an apple pie. I had some short crust pastry left in the freezer and bought some puff pastry for the beef wellington. So I went online to search for the easy apple pie recipe I made. This time, I’m not going to make the pastry from scratch and going to take the easy way out of using the pre-made pastries.

I have so many apples left from lite and easy that I could just use them all. The recipe requires 8 apples but I only have 6 apples left (doh!) so I knew it was going to be a skimpy apple pie with not much filling. So what I need to do is core the apple (I love my apple corer, got some from ikea) and it cuts the apple into perfect 8’s. Then slowly cook them in a pot with sugar, butter, ground cinnamon and gloves until they caramelised. In order to prevent the apples from turning brown splash in some lemon juice first as well..

Then I realised wow it’s shrunk so much…houston we have a problem….I don’t even know whether it’ll turned out to be an apple pie or an apple flat…now it’s time to bake the pastry – poke the pastry with a fork..

Layering them with my apple mixture (please ensure you cool down the apple mixture otherwise it’ll melt your pastry..

Then it’s time for some craftmanship by cutting the puff pastries into strips and layering them into lattice..

and then just use a pastry brush and brush the pasty with some egg wash and bake it in the oven, I baked for around 30-40 minutes as the apple mixture was already cooked and the pastry shouldn’t take too long cooking it..

I think because there wasn’t much apples in my pot it resulted in loads of liquid/sauce but that’s ok, I like my apple pie nice and moist and it came out really nice with the lattice pattern. Even though there wasn’t much apple mixture the apple pie still tasted really nice…






Beef wellington night…

Hi Guys, hope this post finds you well and that you’ve had a lovely weekend. Anyways, over the weekend I’ve decided to bake some goodies as I haven’t been baking lately and also on thursday night I was watching french safari and they made some beef wellington. I’ve never made beef wellington before and it looks delicious!! So on Saturday night I was very adventurous and bought the puff pastry and an expensive piece of beef fillet. I went online searching for the easiest beef wellington recipe and found one on taste as well as Gordon Ramsay’s recipe on fword. It seemed easy enough, mum came over for dinner and I told her I was going to make beef wellington for the first time…here’s the following photos on the outcome of it 🙂


here’s my expensive piece of beef fillet couldn’t find any beef fillet in Coles so went to a free range place and when he told me it was going to cost $38!! I was thinking to myself wow that’s expensive..but I bought it anyways..

Now is sealing the piece of fat beef fillet – my goodness it was a huge piece of fillet they didn’t have any other size so that was the only one I could get..mum was so worried that it’ll still be rare even after I oven bake it…

My whole house smelt like a beef house..the aroma was fantastic..I only seasoned with salt and pepper and the beef was very fresh…

next step was to blend the mushrooms and pan fry it, the french food safari said to use liver pate and truffles…I didn’t want to spend that much and Gordon’s recipe had mushrooms…

The mushroom mixture is very wet and perhaps I should have not put in some butter because it was so wet that I have to put it through a sieve. Anyways, next time I know….so I grab out a nice large cling film and some prosciutto ham and on top of it add the mushroom mixture and then add your meat.

Then roll it up tightly and rest in the fridge for 20 minutes..then I had the problem of wrapping it all up cos the meat was so big that there wasn’t enough mushroom or prosciutto mixture so I had to trim the fillet..

next step is to wrap it in a puff pastry and once again I didn’t have enough puff pastry for the huge size meat, so I had to cut more puff pastry to wrap it around..

next thing is to bake it in the oven for 20 minutes…make sure you brush it with egg wash for the crusty golden colour look…mum was so concerned it wouldn’t be cooked…make sure you score it with a knife as well so the steam can vent out..

It actually looked quite nice and now the moment of truth to cut it open….it needs to be relatively pink inside…

Mum was shocked when she saw the red piece of meat…so I assured her I will put it back to the oven for extra 5 minute so at least the outside is cooked relatively well…

I made some mash by thermie – it was nice and smooth, some olive oil asparagus and some red wine reduced sauce from beef stock, butter and left over juice from the meat….it was delicious..would definitely do it next time except will oven bake a smaller piece of beef fillet…




update on Braces

Hello Guys, happy fridays – I’m so glad this week is over – it’s been really busy at work and this week I needed to have a nice relaxing weekend. Anyways, I thought I’ll write a brief post on how’s my braces going so far. Recently it’s been aching again, I had to go back to the orthodontist to trim the wires that are poking out in my gums giving me sores and it felt a little better. I have two small hooks on my upper teeth, I imagine that they are used for rubber bands…these hooks do poke out unfortunately they are not able to trim it and I’ve slowly adapted to them so far…I’m not so sure why my teeth is aching there’s different theories I’ve read according to my colleagues either it’s winter time and the metal wires contract hence it tightens your teeth and making your teeth ache. Or the braces is working because my teeth is shifting that’s why it’s hurting. Pain = good 😦

Anyways, this week I’m feeling a little bit better so thankfully it’s all good.

1 week with Lite and easy

Hi guys, well – I have survived a week worth of Lite and easy…Pandabear and I have placed another weeks worth of food…last night I was really hungry even though I had my dinner already. So I cheated and had a little snack – a cup of milo and some dried squids…so here’s what I had this morning for brekkie – I was really excited cos it’s a brekkie wrap and I’ve never had it before..

I had so much tomatoes that when I put them together in a wrap I couldn’t fit the bacon and mushroom/spinach mixture so I just left it on the was very delicious and filling I would definitely have this for brekkie again..

last night for dinner I had the steak and vegies with mushroom sauce it looked really good and I know the wedges was going to be soggy as when I used to have it with Jenny Craig it was like that…The flavour was quite nice however the steak was way too lean and fake for me…so I didn’t quite enjoy the steak. So probably won’t be ordering this one again.

Tonight I receive my next week’s worth of food and I’m looking forward to the new dinner menu hopefully they’ll taste better than the ones I have ordered last week…I sneakily weigh myself as well and according to the scale I have lost 0.5kg…but I’m not sure whether it’s just my weight fluctuating or whether it’s cos I was eating Lite and’s still early stages…


Lite and easy – Brekkie, lunch and dinner

Hi Guys, hope this post finds you all well…it’s been so cold lately with the be honest I don’t really like the rain only when I’m napping inside my house then it’s ok but not when you have have to walk to catch the bus. Anyways, I’ve been feeling quite tired lately with some insomnia – waking up couple of times in the middle of the night (when I have too much on my mind) and couldn’t get back to sleep. Fortunately last night I decided it was time to go to the chemist and pick up some herbal supplements that’s able to give me a good night’s rest. Thank God last night I slept a little better. I’m always a little weary when I’m losing sleep as it’s plays an important part in my mental health 🙂

Anyways, here’s some of the food I’ve been eating for Lite and easy..

For lunch, I had a smoked beef burger with tomato relish when I looked at the round roll it was tiny and I thought to myself there’s no way it’s going to fill me up. Surprisingly it lasted me till dinner time 🙂

For dinner I had chicken schnitzel and yup as usual it tasted pretty nice – full of corn, peas, potatoes and carrots.

For last night’s dinner I had the tortilla stack and it was pretty nice except there was way too many beans and chick peas eventually I finished it off..I wanted to have some sort of meat in it….so next time I won’t be ordering this one…

Usually for morning tea or afternoon tea it either provides me with some muesli, fruit cups, and usual apple and orange. I have been avoiding eating fruits lately as it requires me chopping them up in tiny bits for my braces….

So, overall I manage to survive on 1200 calories worth of lite and easy..on the other hand Pandabear have been starving poor thing – I told him to up his calories to 1500 but he still didn’t do it…
