I bought the lovely pork chops from the Victoria Markets and they are like huge compared to the ones I get from the butcher place in Perth. Anyways, I vaguely recall watching this Gordon Ramsay’s Pork chops with piquant sauce which is pretty easy to make. So I thought, why don’t I give it a shot. It’s a pretty easy and delicious dish to make. Here it is…
4 x large pork chops
handful of rosemary
some cloves of garlic
1 x tin can diced tomatoes
handful of mushrooms
1 x red pepper
1 x red chillie
1 x onion
1. Throw some salt and pepper on the baking tray and drizzle with some olive oil and crush the garlic and lay it on the tray then time to slice the rinds of pork chops into little sections, what this does is when you roast them inside the oven the crackling becomes crispy and crunchy. Lay the pork chops on to the tray and repeat the process by laying the olive oil, crush garlic, salt and pepper on top of the pork chops and use a pair of scissor to trim and cut the rosemary and lay it on top of the pork chops.
2. Heat the oven to 200 degree making sure your oven is very hot, and place the pork chop into the oven for about 10 minute and lower down the temperature to about 180 degree and depending on how well you like your pork chops to be done. I love my pork chops well cooked so I leave it for another 5-10 minutes.
3. Now it’s time to make the piquant sauce. Slice the red chillies, diced the onions, slice the red pepper & mushrooms and then with some olive oil into the pan – chuck in the red chillies followed by red pepper and onions and then pour in the can of diced tomatoes and then followed by mushrooms. Season with a teaspoon of sugar and salt & pepper. Vola! There’s your piquant sauce..
The aroma of garlic and rosemary roasted inside the oven make the whole kitchen smells tremendous! I also served the pork chops and piquant sauce with my home made Coleslaw 🙂 Perfect combination.
