Well, after writing about some Thai food it’s time for some dessert again 🙂 this dessert is very simple to make and its delicious…
Here it is…
2 Cups of self-raising flour
pinch of salt
90g butter, chopped
2/3 cup of milk
60g of butter, softned
2 tablespoons of soft brown sugar
1 teaspoon of cinnamon
1 Cup of icing sugar, sifted
1 tablespoon of boiling water
1. preheat the oven to 210 degrees. Lightly grease a baking tray. Sift the flour and salt into a mixing bowl. Using your fingertips, rub the butter into the flour. Make a well in the centre and add almost all the milk. Mix lightly, witha flat-bladed knife, until a soft dough forms.
2. Knead the dough on a lightly floured surface until smooth. Roll out to a rectangular shape.
3. To make the filling, place the butter, sugar and cinammon in a mixing bowl. Using the electric beater, beat until light and fluffy. Spread the filling evenly over the rectangular dough and roll up form the long side. Using a sharp knife slice the dough into 3cm pieces. Place the dough pieces close together, on the baking tray. Bake for 12 minutes or until golden brown. Remove from the oven and leave to cool. Drizzle the icing over the top (or if you are like me can’t be bothered you can skip this part)
4. To make the icing, combine the icing sugar and boiling water in a small bowl and beat the mixture until smooth.
